Let's Make Menemen!



Menemen is a classic and basic Turkish breakfast essential. Made with just a few ingredients, this healthy dish is actually ideal for any time of the day. Menemen

Makes 2 to 3 servings


Ingredients:

  • 3 Tablespoons olive oil

  • 10 charleston (green, not spicy) peppers, diced

  • 1 onion, diced

  • 2 or 3 tomatoes, grated

  • 5 eggs, scrambled

  • Salt + Pepper to taste

  • Parsely, chopped to garnish

  • Optional additions: sausage, shredded mozzarella cheese, or feta cheese


Directions:

  1. Over medium heat, add olive oil, onions, and peppers to a large skillet. Sauté until browning begins on the onions and peppers.

  2. Add the grated tomatoes and cook until tomato juice evaporates. Tip: It is important not to have excess water from the tomatoes for a creamier result.

  3. Once the vegetables start to sizzle again, add in your scrambles egg mixture.

  4. After you add your eggs, give it a stir to fully mix eggs with vegetables. Then be patient and try not to over-stir the mixture.

  5. Once the eggs are cooked, transfer to a serving platter. Tip: The best time to remove the pan from heat is when the eggs are cooked at the bottom but still a bit creamy on the surface. The residual heat from the pan will continue to cook them as you serve.

  6. Garnish with parsley. Serve immediately!

  7. Enjoy!
