Let's Make Cacık!



I am so excited to introduce the first of a five-part series of illustrations representing Turkish recipes. I have long desired to produce illustrations that capture the flavors, colors, and spirit of these recipes, and finally - we are here! After the release of the five illustrations, we will have prints, postcards, and kitchen towels for sale with the illustrations.


Cacık is a yogurt-based side dish, usually served as a soup or meze. It is simple introduction to Turkish food and is perfect for hot summer days! To see how I take each of these ingredients to make cacık, check out the video below.


Cacık

Makes 4 to 6 servings


Ingredients:

  • 2 cups, Turkish Yogurt

  • 1/2 cup cold Water

  • 2 Large Cucumbers, peeled and grated

  • 2 Cloves Garlic, peeled and grated

  • 1 Tablespoon minced mint

  • 1 Tablespoon minced dill (optional)

  • 1/4 Lemon, juiced (optional)

  • Olive oil, drizzle to finish

  • Salt + Pepper to taste


Directions:

  1. In a mixing bowl, combine the yogurt and water. Mix with a whisk until combined.

  2. Add the grated cucumbers, minced garlic, lemon juice, and herbs. Add salt and pepper to taste.

  3. After the ingredients are fully incorporated, transfer to a serving bowl.

  4. Garnish with the mint or dill, and drizzle olive oil on top. Serve immediately or cover with plastic wrap and refrigerate.
