Beyond Flavors: All About Döner Kebab

Meat makes the world go round, well at least in Turkey, meat is cooked by turning round and round. Made of lamb, beef, veal or chicken (and never pork), the spiced meat is placed on a rotating vertical stick in the shape of an inverted cone. Over time, the meat is slowly rotated (the meaning of the word Doner) and cooked. Thin slices are then shaved off and prepared many ways such as durums (meat wraps) or porsiyon, simply plated with rice/potatoes, tomatoes, peppers and a cucumber-garlic-yogurt sauce. Dünyayı döndüren şet ettir, en azından Türkiye'de öyledir. Et döne döne pişirilir. Kuzu, dana, düve ya da tavuk eti (asla domuz etinden yapılmaz) baratlanmış olarak dik konumda dönen bir çubuğa dizilir. Zamanla et yavaşça döndürülür (Döner kelimesi buradan gelir) ve pişirilir. Daha sonra ince dilimler halinde kesilir ve ister dürüm ister porsiyon olarak, pilav/patetes, domates, biber ve cacık eşliğinde, birçok farklı şekilde servis edilir. Ülkenin her yerinde standart bir atıştırmalıktır ve makul fiyatından dolayı bütün ulusu besleyen bir öğündür.
